I also *manually* updated the pin in gitlab-bot/default.nix. This file
is basically a shim for development, so I'm not too worried about it
eventually getting out of sync.

P.S. I am not sure why this caused postgrest to be removed from
flake.lock. But then, I am not sure why it was in there to begin with.
Maybe it was vestigial.
