haddock: Remove obsolete links to github.com/haskell/haddock in the docs

Hécate Kleidukos requested to merge Kleidukos/ghc:remove-obsolete-github-links into master

All references to the sources being located on GitHub have been amended to point to Gitlab. Moreover, out of date tested-with stanzas have been removed, as they are not used by the CI setup.
